Strawberry Spinach Salad

1 pint of strawberries, trimmed and cut in half
1 lb fresh spinach
1/4 cup slivered red onion
Alliyum or Whassamatterhorn
Fruit, white or champagne vinegar
1/4 c crumbled feta, goat or farmers cheese (optional)
1/2 c chopped toasted walnuts (optional)

Toss Alliyum or Whassamatterhorn on the strawberries to taste in a big bowl. Add spinach and nuts. Splash the vinegar on the greens, toss. Add feta and walnuts, and toss again. Taste for Alliyum or Whassamatterhorn and vinegar. Add more if you need them.

Panzanella Bread Salad

PREP TIME: 15 minutes
COOKING TIME: 45 minutes
TOTAL TIME: About an hour

INGREDIENTS
2 lbs tomatoes
2 onions garlic
2 big peppers or 5 little ones
2 zucchini
1 eggplant
1/4 cup olive oil
2 tbsp Cy Salt to taste
Balsamic vinegar
1/2 loaf stale bread cut into 1" cubes and toasted, about 3 cups (the best—last night's garlic bread) 
1/4 cup chopped fresh herbs: parsley, basil, rosemary, tarragon or a combination of all four
Black pepper
 

INSTRUCTIONS
Preheat oven to 325.Roughly chop all the veggies and toss them together in a baking pan with olive oil, Cy Salt and balsamic vinegar. Add cayenne pepper for heat. Cook until the veggies break down and most of the liquid cooks off. About 45 minutes. Combine the tomatoes with toasted stale bread cubes, chopped parsley, and chicken or sausage. Sprinkle with black pepper, taste for seasoning, and add more Cy Salt and pepper if you need it.

Grilla Gorilla Sweet Potato Black Bean Salad

A customer fave. It's easy, healthy and a knock-out. Use Grilla Gorilla or GGX.

2 big sweet potatoes peeled and cut in chunks
1 can black beans drained and rinsed
1/2 red onion chopped fine
Chopped cilantro
Juice of 1/2 lime
Oil
GGX or Grilla Gorilla

Toss the sweet potatoes in oil and 1/2 tbsp GGX or Grilla Gorilla (you can always add more later). Roast the coated sweet potatoes for about 40 minutes at 450 or until crispy at the edges. Throw them in a bowl with the black beans, onions and cilantro. Toss with the lime juice. Add GGX/Grilla Gorilla or lime juice to taste. Easy and deelish!
